The chef
My name is Gregory Doyen, I was born in July’84 in an artistic family in the heart of Brionnais on the south of Burgundy in France.
In a family kitchen my mom helped me to discover mixing ordinary ingredients to get something magical and unforgettable: the real revelation for me.
At the age of 18, I studied pastry in Dijon and then at ENSP in Yssingeaux.
My passion and desire to learn pushed me beyond certain borders and gave me the opportunity to discover China, the United States, Russia and many other countries around the globe.
My unique experience in discovering new cultures and ways of life helped me to improve my skills and find my own style in pastry.
And today my knowledge gives me the desire to share my experiences with you.

You will discover the origin taste of pastries: fruits, herbs, chocolate and many other flavors.
Together we will create the traditional French pastry revised with my unique style using natural local ingredients, without food colorants nor additives.

Châteaux de la Chaix
This property of more than one hectare situated in a beautiful country-side of Charolais-Brionnais where you will discover the jewels of the Romanesque art which soon will be the part of UNESCO heritage.
This is a perfect place for gourmets as well as art and history lovers, food and nature admiers.
Here you will enter in the universe of pastry with the Chef and discover the French gastronomy in the atmosphere of the Château de la Chaix

- Departure for the visits of the day: Company Sicoly and Chocolaterie Weiss
- Discovery of a fruit orchard (depending on the season) and visit of the Sicoly factory, producer of fruit purées
